Our beautiful copper still is a one of a kind, crafted by the team at Stillsmiths in Tasmania. Our spirit is heated using the traditional steam method, to ensure a level of consistency and control over the distillation process. This process ensures we create a light, approachable spirit to be enjoyed by all.

OUR SIGNATURE
 FLAVOURS

As malt whisky purists, Nullaki focusses on creating the best whisky possible utilising the premium ingredients and components we have been able to source within Western Australia. Our Tawny casks reference traditional flavours of spice, blackcurrants and caramel along with a hint of vanilla whilst our Pinot casks seek to inspire a combination of rich, red fruits and well rounded barley along with a hint of pepper.

Cooled by the prevailing winds of the Southern Ocean and set high in the Denmark hinterland, the Nullaki Distillery cellar door benefits from one of the best views in the Great Southern, with expanses clear over Wilson Inlet and the Nullaki peninsula to the Southern Ocean.

After years of development, we are delighted to advise that our boutique cellar door is now open to the public. Summer opening hours from 2 January 2026 are:

Wednesdays 12pm – 5pm

Thursdays 12pm – 7pm

Fridays 12pm – 7pm

Saturdays 12pm – 7pm

Sundays 12pm – 5pm

No bookings required. Public Holidays may change these hours.
